Pascal Doquet has emerged over the last decade as one of Champagne’s premier vignerons, farming prime old-vine parcels in Vertus, Le Mont Aimé, and Le Mesnil-sur-Oger. Guided by natural farming, the domaine has been certified organic since 2010.

This single-parcel Blanc de Blancs originates from Champ d'Alouettes, translating to "Field of Larks", a historic lieu-dit in the Grand Cru village of Le Mesnil-sur-Oger. Originally consolidated by Pascal’s grandfather, this old-vine plot delivers a hyper-localized expression of the village's legendary chalky, structured Chardonnay.

Low-intervention vinification and parcel-specific techniques build intricate texture.

Reserve wines are aged on fine lees in a perpetual reserve to ensure seamless continuity, while final cuvées undergo non-filtered bottling followed by extended aging in 19th-century chalk cellars.

The 2005 vintage highlights the exceptional longevity of Le Mesnil-sur-Oger. Decades of patient cellaring have transformed its vibrant mineral core into a rich, voluptuous, and fully mature expression drinking at its absolute peak.
