The difference between American and French oak is that American oak impoarts stronger aromas of smoke, tobacco, coffee justs to name a few, while French oak imports more subtle aromas of spices.
Therefore it is an art in using the two type of barrels to age wine and then blending them together to ensure a delicious final wine.
